Confinement Food Day 2

Googled for more Confinement recipes, coz I wanted to give Jie some variety instead of repeating the previous day's menu, and found some easy to cook yummy pieces!!

Prepared the garlic & ginger on the pretty chopping board!!! =D

Confinement food is normally piled with ginger which is said to help to clear the wind inside the body.

Stir-Fried French Beans with Minced Pork
French Beans are a rich source of iron, vitamin A, C, riboflavin, thiamin, proteins, omega-3 fatty acids, calcium, copper, phosphorous, manganese and dietary fibers. 


• Help to prevent anemia and diabetes 
• Help to keep a healthy digestive system 


(Serves 2-3)
200g french beans (kacang buncis, wu gui tou) 
200g minced pork
2 cloves garlic chopped
(additional 2-3 cloves to make fried garlic if you want to) 
80g old ginger chopped
3 tbsp little sesame oil
Salt & Pepper to taste
1 tbsp DOM (optional)


*Fried Garlic: Heat the oil and sauté the garlic until brown.






Method:
1) Chop of both ends of the french beans and cut into halves (3-4inch). Then wash and steam the beans until cooked. 


2) Heat the sesame oil and sauté the garlic and ginger until slightly brown.


3) Add the minced meat and stir fry until thoroughly cooked. Add the salt, pepper and DOM and mix well.


4) Dish up and pour over the steamed beans.


5) Garnish with *fried garlic and serve.

Stir-Fried Pork with Ginger & Scallion



(Serves 2-3)
- 200g pork (yor bak), sliced thinly and diagonally (against the grain)
- 80g old ginger sliced thinly
- 3 cloves garlic, minced
- 3 tbsp sesame oil
- 2 stalks spring onions (scallions), cut to 5cm/2-inch lengths
- 1 tbsp DOM (optional)
- 40ml water (optional)

Marinade (A)
- 1 tsp light soy sauce
- 1 tsp dark soy sauce
- 1/2 tsp fish sauce
- 1 1/2 tsp sesame oil

Method:
1) Marinate the pork slices in the marinade ingredients (A) for at least 5 minutes. 
2) Heat oil, fry ginger for 20 seconds. Then add garlic & spring onions (bottom white half) to the wok and stir fry till fragrant.

3) Add pork slices, stir fry till cooked. Add the rest of the spring onions.
4) If you like some gravy to go with your rice, add water. Drizzle some DOM onto the dish and mix. Off the flame. This dish is best served with steamed rice.

Egg Omelette in Sesame Oil
(Serves 1-2)
2 eggs
1 1/2 tbsp water
1 clove garlic chopped
1 tsp soy sauce
1/4 tsp salt
20g old ginger pounded finely or diced











Method:

1) In a small bowl, combine eggs, water, soy sauce and salt by whipping lightly with a fork.

2) Heat a wok over medium heat, add sesame oil, sauté garlic and ginger till fragrant.

3) Pour in egg mixture and fry until cooked, turning over occasionally.

4) Serve as a sandwich for breakfast or with rice for lunch.

BF's sister is doing her 1-mth confinement and she normally has her Aunt (who cooks AWESOME YUMS!!) to cook for her... However, Aunt cant cook today and tomorrow so Big Sis has kindly handed me the task of feeding her... I'm glad she trusts me with her meals since I hardly ever cook and I've never tried making Confinement food before.. 

It made me smile when she said it was all really good!!! =D

Grabbed some recipes off the internet and tweaked them a little:
(The Fried Rice Recipe was cooked to serve 3-4 because I cooked it at one go for Jie's Lunch and Dinner and figured I could eat some too.)

Fried Rice
(Added minced meat and kai lan to the original recipe..)  
(Serves 3-4)
2 cups uncooked rice
160g old ginger sliced & diced
4-5 cloves of garlic smashed & diced
100g minced meat (ngoh hui bak)
3 eggs beaten lightly
3 1/2 tbsp sesame oil
1 full stalk of leafy kai lan remove stalk
Soy Sauce

*Add 60g of old ginger to the minced meat and rub it into the meat. Marinate with some soy sauce after.

Method:
1) Heat up sesame oil and fry the garlic & the remaining ginger over a low fire until fragrant. You can tell when it turns a light golden color.

2) Add in the marinated minced meat. When meat is nearly cooked, add the beaten eggs slowly and stir-fry till cooked.

3) Add the bowl of rice and a little salt to the ginger and egg. Stir-fry over high heat till fragrant. Just before serving, add a little more soy sauce in and stir till all ingredients are well combined.

4) This Chinese Fried Rice with Egg and Ginger is best served immediately.

(Almost similar to the linked recipe except that I substituted the wine with DOM.)
(Serves 1-2)
- 1 slice cod fish
- 30g old ginger diced
- 1/2 tbsp chinese wolfberries or goji berries

Seasoning:
- 1 tbsp soy sauce
- 3 tbsp DOM
- 1 tbsp sesame oil






Method:
1) Wash and dry the cod fish, at the same time, juliennes ginger.

2) Marinate the fish with seasoning, put into a steaming plate, sprinkle ginger and Chinese wolfberries on top, steam for 10 minutes under high heat, and the dish is ready to be served.

Stir-Fried Kai Lan
(Serves 2-3)
This is something I came up with on my own..

2 full stalks of leafy kai lan remove stalk
200g of lean pork (yor bak) sliced - they cost about $25/kg @ the market..
2-3 cloves of garlic diced
60g old ginger diced
1 cup water
soy sauce
2-3 tbsp sesame oil

*Add 30g of old ginger to the minced meat and rub it into the meat. Marinate with some soy sauce after.

Method:
1) Boil kai lan in water til cooked. Drain water leave the kai lan to cool.

2) Heat up sesame oil and fry the garlic & the remaining ginger over a low fire until fragrant. You can tell when it turns a light golden color.

3) Add in the marinated meat. Cook til almost done.

4) Add 1 cup of water, 1-2 tbsp soy sauce, then add the kai lan and mix.

5) Cover the pan for 3 minutes.

Check that meat is tender and then it is ready to be served.

Daddykins brought Mommy, Jerome & I for Jap dinner @ Nara Japanese Restaurant - Serangoon Gardens... YUMMY GOOD!!! =D

They had a lil pre-wedding dinner party for Damien & Nikki!!

At abt 1030ish tt night, Ben & Yuren picked me up...
Havent seen them in FOREVER la!!!
Ultra missed them!! =D
Together with Ben's new gf HuiHui & Friend Shu Quan,
met up with Kassie + Roy at Pasir Ris Park's Beach Culture @ WaterCross..
Their friend Zong Wei came for awhile too...

Day Six:
Picked Baby from school and spent the evening with him at Terminal 3!!

Day Seven:
Spent home ALL DAY!!!!
Nua-ing, filing my paper stuff, updating my iPhone & Blogging!!!
+24Laps in the pool in the late evening...
Couldnt do my 30 coz the pool was closing =(

Didn't get to go for my trip coz i couldn't get tickets to the flight and timing i wanted..
Either way, Birthday Week was still Awesome!!!

This is like the UBER first time i've worked without MCs...
Going into my 5th month with RWS and i've not taken a single sick leave!!! =D
Had training at the Pandan Gardens office for about a month before moving in to Sentosa...

I Love My Job!! =D

In the last few months,
have lost about 15kg thru Swimming!!
Super Happy!!!
Another 15kg to go!!!!
But it's more difficult to find time to swim these days seeing that shift work makes me uber tired and i can hardly find the time to swim....
It's times like these where i feel tt 24hrs a day is not enough...

I need more time for Jerome.
More time for Family.
More time for Friends.
More time for Myself!!!!!!!
